Here's what we ended up having the past 2 weeks:
Monday: Thai Peanut Chicken
Logan and Paul loved this. Logan even had some leftovers later in the week for lunch. I think it was a little too spicy for Sophie.
Wednesday: Sessler Salads
I let the kids choose their own salad dressing for their salad. This is how we decided.

Thursday: Lentil Tacos
Paul didn't seem to like this much (because it didn't have any meat in it). I liked it and even took the leftovers to work for our potluck as a bean dip with tortilla chips.

My mom made this for Logan, since he loves hard boiled eggs so much.

The pizza kit from the night before had chicken nuggets in it so I did those for the kids.

With Easter, we will be out of town so not sure what we'll be eating
