Monday: Classic Beef Stroganoff




I have always loved beef stroganoff but this is the first time I've tried to make it. It was done in the slow cooker and was really good. The kids liked it too.






Tuesday: Pasta with Tomato Meat Sauce




Originally, I was going to make meatloaf, but I didn't get the ground turkey thawed in time so I just did pasta. Turns out the kids LOVED this. It may be messy but when they enjoy dinner this much, who cares.









Wednesday: Barbecue Chicken and Corn

So once again, I forgot to take pictures after the first couple of days. This recipe came from the slow cooker book and was originally meant for chicken wings. I used chicken breasts instead. The kids were not impressed, even though they've eaten barbecue before.





Thursday: Sausage and Rice




I had a meeting tonight so I needed a quick meal that Paul could do while I was gone. We all love sausage and the rice was really good, too.












Friday: Sloppy Joe Freezer Meal

This is one of the meals I made a dew weeks ago. The kids didn't like it the first time around but liked it today.




Saturday: Dinner Out

We took the kids to Grandma's so she fixed them pizza. Paul and I had a great dinner at Pappaduex's. We had mixed seafood grill, bacon wrapped shrimp, and lobster with dirty rice. So good!




Sunday: Hot Dogs

We went to the church for the Halloween Carnival and Trunk-or-Treat. They had hot dogs so we just ate dinner there.

Monday: Chicken with Garlic, Peppers, and Artichokes

I did this in the slow cooker and used canned artichokes instead of frozen. I liked the chicken but Logan LOVED the artichokes. I never know how dinner is going to be with that boy.

Tuesday: Scampi Pasta

I got this recipe from this book...

I didn't like it much...too lemony. But everyone else liked it (ok, the kids didn't really care about the shrimp, but that's fine).


Wednesday: Sessler Salads

This week's salad was "Taco Salad" and we all loved it. Even Logan had some of the salad part, not just the chicken.

Thursday: I was really busy today so I ended up just fixing a frozen pizza for dinner.


Friday: Spring Creek Barbecue

My mom, sister and her kids came into town. We went to a high school football game so we ate dinner near the stadium beforehand.


Saturday: Cici's Pizza

My other sister and nephew joined us for dinner so we went out someplace where we knew everyone would eat.

Sunday: Taco Cabana
Paul decided he'd rather go out than have chicken and veggies. He made the chicken for his lunches this week.

Meal Plan October 17

Monday: Pizza (because as the ship's maitre 'd said, "Momma's not Cookin'")

We took the kids to Cici's for dinner and it was, oh, so good. I love PIZZA!


Tuesday: Chicken with Pasta and Tomato Sauce

I had garlic herb chicken already thawed so I threw this together. I added the frozen fruit salad as an afterthought. Probably needed some vegetables but the kids are so picky these days.



Wednesday: Slow Cooker Pot Roast

This is one of my most favorite meals. It comes pre-packaged, I throw it in the slow cooker with a cup of water and come back later to a great dinner.



Thursday: Kung Pao Chicken

Logan really liked this chicken, but he didn't like the broccoli this time around. Sophie stuck with mostly the rice.



Friday: Asian-Glazed Salmon

I didn't get a picture but we all liked this fairly well.


Saturday: Rotisserie Chicken with Vegetables

We watched a friend's daughter so I decided to just pick up a chicken and fixed some veggies before we had movie night with popcorn.


Sunday: CORN
This is clean out the refrigerator night.

Carnival Cruise



While researching training options for the preschool teachers I came upon this consultant who does training on a cruise ship. I asked Kelly and one of the teachers to go with me and Kelly's friend Brandilyn also came. I love cruises and Kelly has been wanting to go on one so this turned out to be a terrific trip.






The 2 days we were at sea, Gail and I had training in the morning (over by lunch time). We had one port day in Mexico. We decided to do a dolphin experience (Gail had done this before so she just met us afterward). The place we went also had a sea lion show.

We enjoyed many of the activities on the ship, but I think we all just really liked being able to relax and rest. Reading by the pool was certainly my favorite. We took in the shows in the evening after dinner. We saw a vegas-style variety show plus a stand-up comedy show. We also enjoyed the dance party. I really wish I had taken more photos, but honestly I was really just trying to enjoy the time away.

So my laptop got a virus before I could add any photos. Not only that, I was on a cruise for most of the week so this is a really short menu.

Monday: Box Dinner

Tuesday: Chicken and Veggies

I was initially making Kung Pao Chicken but my broccoli went bad so I just baked some chicken breasts and had other veggies from the co-op.

Wednesday: Sessler Salads
I didn't get the kids the salads this time since they didn't like the "fancy" greens before, but they sure do love her chicken. They ended up eating all of Paul's chicken before he got any.

Thursday: Freezer Soup or Chili
The kids were with the sitter and I had left frozen Black Bean Soup and Taco Chili from previous weeks for her to heat up. I was having Southern Fried Chicken on a ship.

Friday: NA
The kids were with the Grandma and Paul was on his own. I had lobster on the cruise. Okay, I ordered the lobster but then couldn't eat it. It reminded me of the alien harnesses on the tv show Falling Skies.

Saturday: NA
Again, the kids were with Grandma so Paul ate what he wanted. I had turkey on the boat.

Sunday: Freezer Pesto Chicken
I left this for Paul to make, while I was eating steak.

This was pretty good. I froze what we didn't finish and will use it next week when I'm on vacation.








I didn't like the taste of this very much (and neither did the kids). I think it was the steak sauce that we didn't like.




Wednesday: Box Dinner


This one wasn't as bad as the previous ones. Even the kids seemed to like it.





Thursday: Frozen Pizza



Our washer broke this morning so my day got completely changed up. Paul ended up fixing pizza while the repairman was at the house.



Friday: Lemon Chicken
This was from our Chinese cookbook. It was a little more time intensive than the other recipes I've made from the book but I enjoyed the batter. I only put the lemons and sauce on half in case the kids didn't like it.





Saturday: Olive Garden
My mom was in town and I decided to go out instead of fixing what I had planned.


Sunday: Taco Chili

This was very good and very simple. It was only 5 ingredients, all things I typically have in the pantry (or freezer), so it will be good for days when I've forgotten to plan. I also froze the leftovers to use while I'm gone.



This week's plan is shortened because I am going out-of-town and the kids will be spending some time the Grandma. I'm not planning meals for when they are gone...Paul can just figure that out for himself.
